August 25, 2009 - cake cake cake

ughhhhhhh so my new class is kind of lame.... we moved to a new campus that actually sucks and THE PARKING COSTS 5 DOLLARS A DAY. fuck you pasadena.
i sort of dislike my chef... i feel like im being cheated lol. im not paying 43 grand for this program for some dumbass who doesnt care enough to be teaching me. anyways.. at first it was sort of really bad, but i guess its sort of getting better? my chef still sucks, but its not as bad as it was the first few days anymore.

ANYWAYS, TIME FOR PICTURES


this is a Vanilla Genoise with Raspberry Jam and Vanilla Buttercream Frosting. this is the first cake we made for the class... ugh it was such a pain in the ass, i hated this cake.


pineapple upside down cakeeeeee! ughhhhhhhhh this cake was delicious. we made this yesterday. me and some of the girls in my class decided to munch on my cake and ended up eating almost half of it. IT WAS SO DELICIOUS.



this gorgeous cake is called an "Alhambra" its freaking deliciousssssssssssssssssssssssssss. okay so, its a chocolate hazelnut spongecake soaked with coffee rum syrup, layered with chocolate ganache, covered in marzipan, and then glazed with chocolate... and its decorated with marzipan flowers, pistachios, and chocolate piping. YUMMMMMYMYMYMYMYMY. this cake was so fun to make and it is surprisingly really light on in texture. after making it i was thinking that it would be a really dense and heavy cake, but its sooooo fluffy and good.. om nom nom..

anyways! thats pretty much it! tomorrow = carrot cake with lemon cream cheese frosting.. yum.

August 18, 2009 - looootssss of pictures

so i realize i havent updated this in awhile...
i have a ton of pictures of yummy food ive made over the last few weeks! first off, i have pictures from a final i took two classes ago! we had to set up another buffet type thing.. but this time it was a breakfast pastry spread!


this was probably one of my favorite finals so far... the buffet includeddddddd

an assortment of danishes (cream cheese, raspberry & cream cheese, and bear claws)

the final was basically 3 days to make danish dough, croissant dough, and puff pastry dough from scratch and then finish them into their final form! i had a lot of fun setting up the table! that class was probably one of the funnest classes ive taken thus far; my two chef instructors were absolutely fun and they made us a gourmet lunch like everyday lol. the only thing that was really ridiculously stressful about this class was finding oven space... we baked so many things almost everyday. you really had to push and shove your  way through to find an open oven to bake your products.

next couple pictures are just of random things ive made in my last class + pictures of my  final for that class. i didnt take many pictures of that class just because it was so busy that i forgot most days.


this is a plum and almond tart... its super delicious!


this sugary masterpiece is called a Paris Brest. it is the most heavenly pseudo-cream puff ever... it consists of a doughnut shaped pate a choux puff; baked and hollowed out, sliced almonds, chocolate, powdered sugar, chantilly cream, and praline pastry cream. it is magical and delicious and i wish i had one right now :[


this was my final for the last class i took! it is a Strawberry Banana Mousse with Ribbon Sponge Cake and Red Raspberry Coulis. theres a really pretty design on the actual cake part! you can kinda see it in the first picture... anyways yeah, I got an A+ :]

todayyyy in my new class we made a Vanilla Genoise Cake with Raspberry Jam and Vanilla buttercream! ill post pictures tomorrow.. i think we`re making a black forest cake soaked with kircsh (cherry flavored liquor) tomorrow lol.
